Garlicky Sweet Chili Thai String Bean Chicken

Ingredients:
- Chicken
- 2 lbs boneless skinless chicken thighs cut into cubes
- 3-4 Tbsp cornstarch
- 1/4 cup vegetables oil
- Vegetables
- 2 bell peppers sliced
- 1 lb bag of green beans steamed or blanched
- 1/2 Tbsp garlic minced
- 1/4 teaspoon ginger (Optional)
- Seasoning
- 1 Tbsp garlic powder
- 1 teaspoon crushed red pepper
- Salt and pepper (about a teaspoon of each)
- 1/8 teaspoon sesame oil
- 11/4 cup sweet chili sauce
Instructions:
- In a large bowl add the diced chicken and a Tbsp of oil. Add the garlic powder, salt and pepper and rub it into the chicken. Add the cornstarch. Mix well until the chicken is coated in cornstarch.
- In a large skillet or wok over Medium heat add 3 Tbsp of oil. Working in small batches add chicken. Do not overcrowd the pan. Turn chicken often so it cooks evenly. Add more oil if needed. Once chicken is added your desired crispness/tenderness remove and set aside.
- Repeat with next batches.
- In the same pan add bell peppers and saute until they reach your desired tenderness. Next add the minced garlic and cook until fragrant. Add the chicken, green beans, Sweet chili sauce, sesame oil, ginger and crushed red pepper. Stir until combined and the chicken and green beans are coated in the chili sauce.
