
Fried Catfish Po-Boy
Were making a tender and crispy fried catfish Po-Boy. The Po-Boy is a classic sandwich that comes in many protein variations and the catfish Po-Boy is one of the best, enjoy.

Method
- Clean and trim catfish fillets.
- Apply mustard coating them evenly on all sides.
- In a large bowl combine cornmeal, all purpose flour salt, pepper, granulated garlic and Worcestershire seasoning.
- Dredge catfish fillets in seasoning blend. Set aside.
- In a large skillet or Dutch oven, heat vegetable oil to 350° F.
- Fry catfish in batches until golden brown and internal temperature of 145° F is reached.
- Use a slotted spatula to remove catfish to a wire rack lined with paper towels.
- Split Hoagie rolls lengthwise, butter and toast until crispy.
- Apply mayonnaise to both sides. Add tomato slices, shredded lettuce or whichever topping you choose. Finally add a golden brown catfish fillet. Melt cheese on top if desired.
