Fire Cracker Chicken

Ingredients
- 2 lb chicken breast
- Salt
- Pepper
- 1/3 cup corn starch
- 2 eggs
- Vegetable oil
- 1/2 cup brown sugar
Sauce ingredients
- 1 Tb rice wine vinegar
- 1/4 tsp red pepper flakes
- 1/3 cup wing sauce
Directions
- Cut chicken breast into 1 inch cube
- Season both sides with 1-2 tsp of salt and pepper
- Add corn starch and fully coat
- Â In a bowl medium size bowl break two eggs
- Vigorously blend yoke and white to create egg wash
- Preheat skillet with 3-4 Tb oil over med heat
- Dip coated chicken piece into egg wash and place in hot skillet
- Let cook 3-4 minutes per side until golden brown
- Place on wire rack to drain and cool
- Preheat over to 350
- In large bowl blend rice wine vinegar, red pepper and wing sauce
- Place chicken in 9 x 13 baking dish
- Cover with sauce and blend well to saturate all of chicken
- Spread chicken out to single layer
- Bake for 25 min. turn and stir half way thru baking
This deliciously crispy chicken goes great over a bed of rice and topped with green onions.
