Fire Roasted Tomato Soup

Ingredients
- 2 Tb grape seed or olive oil
- 2 cans fire-roasted tomatoes
- 8 oz. roasted red bell peppers chopped
- 2-3 cloves garlic minced
- 1 small yellow onions diced
- 2 Tb tomato paste
- 1 cup vegetable broth
- 1 1/2 Tb smoked paprika
- 1/4 tsp cayenne pepper
- 1/2 tsp cumin
- 1/2 tsp cracked black pepper
- 1/2 tsp brown sugar
Directions
- Preheat oil in a pan (medium heat) and add onions. saute for 2-3 min
- Add garlic and simmer for 1-2 min
- Stir in fire-roasted tomatoes, roasted peppers, and tomato paste and mix
- Combine the vegetable broth into the mixture
- Season with pepper, cumin, paprika, and brown sugar
- Stir and simmer for 15 min
- After simmering you can remove the large pieces of tomato and pepper and place them in a blender or processor to create the consistency you like
- Return to soup and mix well
