Filipino Pancit

Pancit is a simple but filling Filipino dish prepared with noodles, vegetables, and with or without meat.  Easy to make with whichever vegetable you have on hand, you’ll love Pancit, enjoy.

Ingredients

  • 1 cup shredded chicken (rotisserie chicken works great).
  • 1 (8 ounce) package dried rice vermicelli noodles.
  • 2 tablespoons soy-based liquid seasoning.
  • 3 tablespoons olive oil
  • 1 tablespoon sesame oil
  • 4-6 cloves garlic, chopped
  • 1 medium onion, chopped
  • 1 cup chopped celery
  • 2 carrots thinly sliced
  • 1 tbs celery salt
  • 1 tbs smoked paprika
  • 1 tbs pepper
  • 1 tbs salt
  • 1 cup chicken broth or vegetable bouillon
  • 1 tablespoon chicken bouillon (optional)
  • ¼ cup soy sauce
  • 2 lemons – cut into wedges, for garnish

Directions

  1. Shred rotisserie chicken, or…
  2. Place rice noodles in a large bowl; cover with warm water and let soften for 8 to 10 minutes. Drain and set aside.
  3. Heat 1 cup chicken or vegetable broth over medium heat.
  4. Place noodles in hot chicken broth, adding hot water to cover if needed.
  5. Let simmer until noodles soak up broth, 5 to 7 min.
  6. Drain excess broth if necessary.
  7. Place noodles into a bowl and add soy seasoning, 1 tablespoon olive oil, sesame oil, celery salt, and smoked paprika. Mix well and set aside.
  8. Heat 2 tbs olive oil in a skillet or large wok over medium-high heat.
  9. Saute garlic in the hot oil until it begins to brown, about 1-2 minutes.
  10. Add onion and cook for 2 minutes.
  11. Add chicken and cook for 2 minutes stirring occasionally (add chicken bouillon optional).
  12. Add celery, cabbage, and carrots. Stir-fry for 3 to 4 minutes; season with salt, pepper.
  13. Mix chicken mixture with noodles, add soy seasoning to taste, and serve.
