Fettuccine with savory Cajun Chicken and Jumbo Shrimp

 

Fettuccine w/ Chicken & Shrimp

Kenny's back in the kitchen this time to prepare a savory fettuccine dish teaming with Cajun spiced chicken and jumbo shrimp. Enjoy

Ingredients
  

  • 2 chicken breast diced 2 Lbs
  • Garlic powder
  • Cajun seasoning
  • 1 Lb jumbo shrimp
  • 1-2 Tbsp olive oil
  • 8 oz white mushrooms
  • 3 cloves garlic minced
  • ¼ cup sun-dried tomato basil pesto
  • ¼ cup tomato basil sauce
  • ½ chicken broth

Method
 

  1. Season cubed chicken with garlic powder and Cajun seasoning
  2. Season shrimp with the same seasoning
  3. In large pan heat oil over medium heat
  4. Add chicken and cook 4 min until pink gone
  5. Remove meat and set to the side
  6. In the same pan add 1-2 tsp oil and add shrimp. Cook 3 min over medium heat
  7. Remove shrimp and in the same pan add 1 tsp oil to existing juices in the pan
  8. Add mushrooms to the pan and cook for 2 min
  9. Add garlic and simmer over med heat 2-3 min
  10. Add pesto, sauce, and broth and stir
  11. Add in chicken and shrimp to your sauce
  12. Prepare fettuccine by boiling 10 min with 1 tsp salt
  13. Add garlic bread to complete the dish. Enjoy
