How to make Elote Mexican street corn at home

You may have seen Mexican street food vendors selling a strange dish made from corn and mayo often times on a stick or the kernels scraped into a cup. Either way the combination of corn, mayo, cheese and spice make the Elote a king of the street foods. Elotes are easy to make and have an awesome flavor so if you’ve never had one it’s time to try! Elote Mexican street corn

Ingredients

  • Several ears of corn (de-husked)
  • Cotija cheese
  • Tajin chili powder (or your favorite spicy chili or paprika)
  • 1/4 cup mayo (not miracle whip)
  • 2 Tb sour cream

Directions

  1. Corn can be grilled or boiled
  2. Mix mayo and sour cream
  3. Evenly spread crema (mayo & sour cream) over surface of corn covering evenly
  4. Cover corn with Cotija cheese
  5. Sprinkle favorite spicy chili pepper or paprika on top
