Cuban Chicken, Black Beans and Rice Bowl

Cuban Chicken, Black Beans and Rice Bowl

Ingredients

For Chicken:

  • 2 large chicken breast diced
  • 2 Tbsp ground cumin
  • 1 Tbsp Chili powder
  • 1 Tbsp dried oregano
  • 4 garlic cloves
  • Salt and pepper to taste
  • Zest and juice of one orange
  • Zest and juice of one lime

Black beans:

  • 1-2 cans black beans drained
  • 2 tsp vegetable oil
  • 1/2 yellow onion diced
  • 3 garlic cloves minced
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Cilantro Lime Rice:

  • 1 1/2 cups Jasmine Rice
  • 1 tsp vegetable oil
  • 1/2 yellow onion diced
  • 3 cups low sodium chicken broth
  • Zest and juice of 2 limes
  • 1/2 cup cilantro chopped
  • Salt and pepper to taste

Directions

  1. Add all the ingredients for the chicken Marinade in a blender.
  2. Add the cumin, chili powder, dried oregano, garlic cloves, Zest and juice of one orange and one lime, salt, and pepper. Blend until smooth texture is reached.
  3. Add chicken to a bowl or large zip lock bag.
  4. Pour half the marinade over the chicken and massage until thoroughly coated.
  5. Allow at least 30 minutes or so to overnight marinate time.
  6. Heat large skillet to medium high heat with vegetable oil.
  7. Add chicken and cook for 10-12 minutes until browned and cooked thoroughly.
  8. Add remaining Marinade and cook until sauce reduces slightly(about 4-5 minutes).

Black Beans

  1. In a large cast iron skillet heat oil on medium high heat.
  2. Add onions and saute until translucent about 2-3 minutes.
  3. Add garlic and continue to saute another 30 seconds.
  4. Add Black beans and spices. Cook 5-8 minutes.
  5. Mash half the beans with a potato masher and mix with the rest.
  6. Season with salt and pepper if needed.

Cilantro Lime Rice

  1. In a large saucepan heat oil over Medium high heat.
  2. Add onions and saute until softened.
  3. Add rice and stir to coat for about a minute.
  4. Add chicken broth and bring to a boil.
  5. Reduce heat and let simmer with lid on about 15 minutes until most of the liquid is absorbed.
  6. Remove from heat allowing Rice to set for another 5 minutes.
  7. Add lime, cilantro and season with salt and pepper as needed.
  8. Finally serve in bowls with black beans and chicken along side. Also pairs well with Mango salsa and plantains.
