Salmon fillet stuffed with a Parmesan creamy spinach, sounds delish right! Well, Kenny’s in the kitchen again this time he’s taking salmon to the next level with his creamy spinach stuffed salmon fillet!
Creamy Spinach Stuffed Salmon
Ingredients
- Salmon fillets
- 1 tbsp salt
- 1 tbsp pepper
- 1/2 lemon
- 1 tbsp oil
Spinach filling
- 12 oz spinach (fresh or frozen)
- 2-3 oz cream cheese (room temp)
- 2- 3 oz Parmesan cheese
- 2-3 cloves garlic minced
- 1-2 tsp salt
- 1-2 tsp pepper
Directions
- Cut fillets (width-wise) to create 3 in section
- Rub olive oil onto fish then season with salt, pepper and fresh-squeezed lemon juice
- Holding fillet section on its side cut a pocked into fish (don’t cut all the way thru fish)
- Make sure spinach is thawed before use if frozen and slightly sauteed if fresh
- In a large bowl mix spinach, cream cheese, Parmesan cheese, garlic, salt, and pepper (Allow cream cheese to sit out at room temp before using)
- Stuff salmon with several tbsp of filling
- To bake preheat oven to 350 and bake 18-20 min
- To grill or fry preheat to med-high (add 1 1/2 tbs oil and 1 tbs butter to pan)
- Reduce heat to med then cook skin side up first then flip (6-7 min per side)
