Chipotle Chicken with Creamed Spinach
IngredientsÂ
- Creamed Spinach:
- 1 cup heavy whipping cream
- 5 garlic cloves minced
- 1 cup Parmesan cheese freshly shredded
- 5-10 ounces spinach
- 1 Tbsp lemon Zest Optional
- Chipotle Chicken:
- 1.5 lbs boneless skinless chicken thighs
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon Chipotle pepper powder
- 1 teaspoon granulated garlic
- Salt and Pepper ground to Taste
- 2 Tbsp fresh parsley chopped for garnish

 Creamed SpinachÂ
- Â Add heavy whipping cream and garlic to a large skillet and bring to a boil. Add Parmesan cheese and stir. Reduce heat to medium low and stir until cheese is melted (2-3 minutes).
- Add fresh spinach, stir in the Parmesan sauce on medium low just until spinach starts to wilt slightly. Add salt and pepper if needed. Remove from heat. Top with lemon Zest if preferred.
Chipotle Chicken:
- Generously season chicken with salt, pepper, garlic, paprika and Chipotle powder. Prepare a separate skillet for chicken (cast iron preferably).
- Heat cast iron skillet over medium heat for three minutes to allow cast iron to heat through. Add two Tbsp Olive Oil to skillet and cook chicken smooth side down for 5 minutes. Flip, reduce heat to medium low for an additional 5 minutes. Internal temperature should be 165°F.
- Turn off heat, add 1 Tbsp butter and mix well to coat chicken. Serve chicken with fresh chopped parsley alongside Creamed Spinach.
