Chimichangas Bogus Style
Prep time: 10 minutes
Cook time: 20 minutes
Total time: 30 minutes
IngredientsÂ
- 2 lbs boneless skinless chicken breasts(cubed) or shredded rotisserie or steak or ground beef, turkey, vegan crumble etc.
- 1 Tbsp Chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon Salt
- 4-5 small Jalapeño sliced
- 1/2 cup salsa
- 2 cups shredded cheese (Colby Jack/ Gouda)
- Whatever you like!
- 11/2 Tbsp green onion (chopped)
- 11/2 Tbsp cilantro (chopped)
- 1 15 ounce can refried beans
- 4-6 Burrito size flour tortillas
- 1 Tbsp oil
- 3 more Tbsp oil for frying
InstructionsÂ
- Preheat large pan on a medium high heat and add 1 Tbsp oil
- Add cubed chicken breasts, chili powder, cumin, smoked paprika, cayenne pepper, salt and cook until no longer pink (About6-8 minutes)
- Add jalapeños, salsa, green onions and cilantro
- Simmer for another 3-4 minutes
To Assemble the Chimichangas
- Spoon 2 Tbsp refried beans onto your steamed tortilla 2 inches from the edge
- Add a thin layer of cheese
- Add about 1/2 cup of the meat mixture into the center
- Fold in the sides of the tortillas and then roll up the bottom and place seam side down on a baking sheet
Bake option:
- Brush tops with olive oil
- Bake for 20 minutes or until golden brown
Fry option:
- In a large pan add 2-3 Tbsp oil until glistening
- Add chimichangas (seam side down) and brown each side( about minute per side)
- Drain
Serve with Sour Cream, Guacamole and more Cilantro!!! Enjoy/Tastedis
