Chicken Parmesan Meatball Bake over Linguine

Cook time: 15-20 minutes
Total time: 30-35 minutes
Ingredients
  • 1 lb. ground chicken
  • 1/2 cup bread crumbs
  • 1/4 cup freshly grated Parmesan
  • 2 Tbsp freshly chopped parsley(more for garnish)
  • 4 cloves garlic, minced
  • 1 large egg
  • Kosher Salt (to taste)
  • Fresh Cracked Black Pepper (to taste)
  • 3 Tbsp oil: extra virgin olive oil, grapeseed oil etc.
  • 1 28oz can crushed tomatoes
  • 1 teaspoon red pepper flakes
  • 2 cups freshly shredded Mozzarella
Directions
  1. Preheat oven to 400 degrees. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, parsley, half the garlic, egg with salt and pepper. Mix until fully combined and form into meatballs.
  2. In a large cast iron(bake proof skillet), heat 1 Tbsp oil over Medium heat add meatballs and brown each side 5 minutes. Transfer to a plate Chuurch!
  3. Add remaining 2 Tbsp oil to skillet. Add remaining garlic and cook until fragrant. Stir crushed tomatoes and red pepper flakes.
  4. Bring to a simmer and return your meatballs to the mix. Hit it with the shredded Mozzarella and bake for about 10 minutes, until cheese is melted and chicken is no longer pink.
  5. Garnish with parsley and more cheese if needed.
