
Chicken Parmesan Meatball Bake over Linguine

Ingredients
- 1 lb. ground chicken
- ½ cup bread crumbs
- ¼ cup freshly grated Parmesan
- 2 Tbsp freshly chopped parsley more for garnish
- 4 cloves garlic minced
- 1 large egg
- Kosher Salt to taste
- Fresh Cracked Black Pepper to taste
- 3 Tbsp oil: extra virgin olive oil grapeseed oil etc.
- 1 28 oz can crushed tomatoes
- 1 teaspoon red pepper flakes
- 2 cups freshly shredded Mozzarella
Method
- Preheat oven to 400 degrees.
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan, parsley, half the garlic, egg with salt and pepper. Mix until fully combined and form into meatballs.
- In a large cast iron (bake proof skillet), heat 1 Tbsp oil over Medium heat.
- Add meatballs and brown each side 5 minutes. Transfer to a plate!
- Add remaining 2 Tbsp oil to skillet. Add remaining garlic and cook until fragrant.
- Stir in crushed tomatoes and red pepper flakes.
- Bring to a simmer and return your meatballs to the mix.

- Hit it with the shredded Mozzarella and bake for about 10 minutes.

- Once cheese is nice and melted it's time to serve.

Until cheese is melted and chicken is no longer pink.
Garnish with parsley and more cheese if needed.
