Chicken Parmesan Meatball Bake over Linguine

Ingredients
- 1 lb. ground chicken
- 1/2 cup bread crumbs
- 1/4 cup freshly grated Parmesan
- 2 Tbsp freshly chopped parsley(more for garnish)
- 4 cloves garlic, minced
- 1 large egg
- Kosher Salt (to taste)
- Fresh Cracked Black Pepper (to taste)
- 3 Tbsp oil: extra virgin olive oil, grapeseed oil etc.
- 1 28oz can crushed tomatoes
- 1 teaspoon red pepper flakes
- 2 cups freshly shredded Mozzarella
Directions
- Preheat oven to 400 degrees. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, parsley, half the garlic, egg with salt and pepper. Mix until fully combined and form into meatballs.
- In a large cast iron(bake proof skillet), heat 1 Tbsp oil over Medium heat add meatballs and brown each side 5 minutes. Transfer to a plate Chuurch!
- Add remaining 2 Tbsp oil to skillet. Add remaining garlic and cook until fragrant. Stir crushed tomatoes and red pepper flakes.
- Bring to a simmer and return your meatballs to the mix. Hit it with the shredded Mozzarella and bake for about 10 minutes, until cheese is melted and chicken is no longer pink.
- Garnish with parsley and more cheese if needed.
