Chicken Gravy Cornbread Dressing

Say hello to your new favorite dressing dish. Made with real chicken, stock, and cornbread, this chicken gravy dressing recipe is so good it could be the main dish not just a side, enjoy.

Ingredients
  

  • 2 cups Self Rising Cornmeal mix
  • 1-2 Tbsp sugar Optional
  • 2 eggs beaten separate save 1 for the dressing
  • 1 ½ cup of milk
  • 3 boneless skinless chicken breasts
  • 1 onion diced
  • 1 green bell pepper diced
  • 3-4 celery stalks diced
  • 1 can cream of chicken soup
  • 1 32 oz chicken stock or broth
  • 2 Tbsp Kinder's The Blend separated
  • 1 Tbsp poultry seasoning
  • 1 Tbsp ground sage
  • â…“ cup flour
  • 1 tsp each: onion powder garlic powder, black pepper Creole Seasoning (for gravy)

Method
 

  1. Preheat oven to 375°F
  2. Season chicken breasts generously with the Blend Seasoning
  3. Wrap loosely in aluminum foil and bake 35-40 minutes
  4. After baking shred with 2 forks and save juices.
  5. In a large bowl combine Cornmeal mix, 1 egg, milk and sugar (if using, I did).
  6. Pour mix in a large greased cast iron skillet. Bake 20-25 minutes or according to package directions.
  7. In a large pan melt butter and add bell pepper, celery.
  8. Saute until veggies start to soften. Add onions and continue to saute until translucent.
  9. Add gravy seasoning and continue to saute.
  10. Slowly add flour.
  11. Pour in chicken stock and gently whisk Gravy together.
  12. Add chicken drippings, mix then add shredded chicken. Simmer.
  13. In a large baking pan transfer cornbread and break into crumble.
  14. Add cream of chicken, 1 egg, poultry seasoning and half the sage.
  15. Ladle a nice heaping of your chicken Gravy into your cornbread mixture.
  16. Slowly add about 3/4 cup chicken stock or as needed to create a loose but firm consistency.
  17. Top with a light dusting of remaining sage and bake 45 minutes uncovered until golden brown.
  18. Let cool to taste. Ladle chicken Gravy over the top
