Kenny’s back in the kitchen making a fan favorite chicken fajita quesadillas. Great anytime and made with juicy chunks of chicken cooked in an original chili spice season blend. These quesadillas are always going to be a hit.
Chicken Fajita Quesadilla

Ingredients
- 2-3 Lbs chicken breast cubed
- 1/2 red bell pepper
- 1/2 yellow bell pepper
spice blend
- 2 Tbsp chili powder
- 1 Tbsp adobo seasoning
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cayenne pepper
- 1/4 tsp crushed red pepper
- 1/2 tsp oregano
- 2 Tbsp ground cumin
- 1/2 tsp smoked paprika
- 1 tsp kosher salt
- 2 tsp ground black pepper
Directions
- In a large skillet preheat over medium heat with 2 Tbsp oil
- Add meat and season with salt and pepper
- Cook until pink is out but not fully cooked
- Add season blend and simmer
- Add peppers to the pan and simmer next to meat 1 min then blend together
- Add 1 tbsp oil to the second pan and heat over med temp.
- Add tortilla and warm for 30 sec. add cheese and meat filling
- Fold into half browning both sides.
