
Bogus' Chicken Chili w/ tonz'a Veggies
This is a great dish which is easy to make on the stove or in a crock pot. It's full of protein and veggies so its good for you. This recipe makes enough for several meals so its a time saver in the long run.

Ingredients
- 1 cup Chili beans cooked
- 1 cup black beans cooked
- 1 cup bell peppers
- 1 cup zucchini diced
- 1 onion diced
- 2-15 oz cans tomatoes diced
- 1 cup corn frozen or can
- 1 lb. Grilled boneless chicken breast or thighs
- 2 ½ tbsp Chili powder
- 1 ½ tsp garlic powder
- 2 tsp Basil dried
- 1 tsp oregano
- 2 tbsp cumin
- 3 cups of water
- 2 tbsp maple syrup optional
Method
- Season and grill chicken.
- Prepare veggies, cut into 1 inch size pieces.
- In a large stove top or crock pot add diced tomatoes, precooked beans, veggies, and meat.
- Simmer for 40-60min. until thoroughly mixed and warmed.
- Top with cilantro, crackers and your favorite cheese.
