Chicken Chili with tonz’a Veggies

This is a great dish which is easy to make on the stove or in a crock pot. It’s full of protein and veggies so its good for you. This recipe makes enough for several meals so its a time saver in the long run.

Bogus’ Chicken Chili w/ tonz’a Veggies

 

Ingredients

  • 1 cup Chili beans (cooked)
  • 1 cup black beans (cooked)
  • 1 cup bell peppers
  • 1 cup zucchini (diced)
  • 1 onion (diced)
  • 2-15oz cans tomatoes (diced)
  • 1 cup corn (frozen or can)
  • 1lb. Grilled boneless chicken (breast or thighs)
  • 2 1/2 tbsp Chili powder
  • 1 1/2 tsp garlic powder
  • 2 tsp Basil, dried
  • 1 tsp oregano
  • 2 tbsp cumin
  • 3 cups of water
  • 2 tbsp maple syrup (optional)

Directions

  1. Season and grill chicken.
  2. Prepare veggies, cut into 1 inch size pieces.
  3. In a large stove top or crock pot add diced tomatoes, precooked beans, veggies, and meat.
  4. Simmer for 40-60min. until thoroughly mixed and warmed.
  5. Top with cilantro, crackers and your favorite cheese.
