Chicken cabbage stir-fry is an easy and delicious option for anyone trying to eat healthier or on a keto diet. Cabbage stir-fry and can easily be prepared alone for vegetarian, or substitute chicken for tofu, enjoy.
Chicken Cabbage Stir-fry
INGREDIENTS
- 1 lb Boneless skinless chicken breasts (cut into strips)
- 1 tsp sea salt
- 1 tsp black pepper
- 2 Tbsp Olive Oil (divided)
- 4-6 garlic cloves minced
- 2 Tbsp fresh ginger grated
- 1/2 large onion diced
- 1 large red bell pepper sliced
- 1 medium head of cabbage chopped
- 2 carrots shredded
- 2 Tbsp soy sauce
- 2 Tbsp honey
For Garnish
- 1 Tbsp Sesame seeds
- 2 tsp Toasted sesame oil
- 1/2 tsp red pepper flakes
DIRECTIONS
- Season chicken strips with salt and pepper.
- Heat 1 Tbsp of oil in a large cast iron skillet or wok on medium high heat.
- Add chicken and sear for 4-6 minutes until golden brown and done. Remove and set aside.
- Reduce heat to medium. Add the remaining Tbsp of oil.
- Add garlic and ginger. Saute for 30 seconds until fragrant then add onions and peppers.
- Saute 5-6 minutes until onions are translucent and peppers softened a bit.
- In a small bowl whisk together soy sauce and honey.
- Add cabbage to the pan. Saute with other veggies.
- Pour soy sauce/honey concoction over and continue to saute.
- Return chicken to the mix.
- Combine well for another 2-3 minutes.
- Remove from heat, stir in toasted sesame oil if using and garnish with red pepper flakes and sesame seeds if desired.
