Chicken Cabbage Stir-fry

Chicken cabbage stir-fry is an easy and delicious option for anyone trying to eat healthier or on a keto diet. Cabbage stir-fry and can easily be prepared alone for vegetarian, or substitute chicken for tofu, enjoy.

 

Chicken Cabbage Stir-fry

INGREDIENTS

  • 1 lb Boneless skinless chicken breasts (cut into strips)
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 2 Tbsp Olive Oil (divided)
  • 4-6 garlic cloves minced
  • 2 Tbsp fresh ginger grated
  • 1/2 large onion diced
  • 1 large red bell pepper sliced
  • 1 medium head of cabbage chopped
  • 2 carrots shredded
  • 2 Tbsp soy sauce
  • 2 Tbsp honey

For Garnish

  • 1 Tbsp Sesame seeds
  • 2 tsp Toasted sesame oil
  • 1/2 tsp red pepper flakes

DIRECTIONS

  1. Season chicken strips with salt and pepper.
  2. Heat 1 Tbsp of oil in a large cast iron skillet or wok on medium high heat.
  3. Add chicken and sear for 4-6 minutes until golden brown and done. Remove and set aside.
  4. Reduce heat to medium. Add the remaining Tbsp of oil.
  5. Add garlic and ginger. Saute for 30 seconds until fragrant then add onions and peppers.
  6. Saute 5-6 minutes until onions are translucent and peppers softened a bit.
  7. In a small bowl whisk together soy sauce and honey.
  8. Add cabbage to the pan. Saute with other veggies.
  9. Pour soy sauce/honey concoction over and continue to saute.
  10. Return chicken to the mix.
  11. Combine well for another 2-3 minutes.
  12. Remove from heat, stir in toasted sesame oil if using and garnish with red pepper flakes and sesame seeds if desired.
