Caribbean Curry Goat

Tired of fish, chicken, and beef? Maybe it’s time to ‘up’ your meat game and try the Goat. This spicy caribbean dish is deliscous made with goat meat cooked to tender perfection and seasoned with caribbean spices, enjoy.

 

The Goat Caribbean Curry Goat

Ingredients

  • 2 pounds Goat
  • 4 stalks fresh thyme
  • Salt and pepper
  • 1 teaspoon All Purpose Seasoning
  • 1 small red bell pepper sliced
  • 1 small yellow onion sliced
  • 1 large potato peeled and cubed
  • 2 Tbsp Curry powder
  • 1 teaspoon Allspice
  • 1 scotch bonnet pepper or habanero
  • 2-3 shallots
  • 7 cloves garlic
  • Cooking oil
  • 4-5 cups of water
  • Juice of 2 limes
  • Vinegar
Preparation
  1. In a large bowl clean Goat meat with lime juice and vinegar. Season Goat with salt, pepper, Allspice, All purpose Seasoning, 2 stalks of the thyme and Curry powder.
  2. In a food processor or blender, mix shallots 5 garlic cloves 1/2 of the small onion in 1/8 cup water. Pour mixture over Goat, massage into meat and let marinate for 3 hours or over night.
  3. In a deep pot heat 2 Tbsp oil over medium high heat. Sear Goat in batches (be sure not to over crowd pan. Once Seared reduce heat to medium and cover for 10 minutes. Pour hot water in your Marinade bowl (about a 2 cups).
  4. Pour watery marinade over Goat, stir and cook on medium low for 2-3 hours checking texture every hour. Add water as needed
  5. Once meat is tender add onions, peppers and potatoes. Make sure liquid just covers everything and cook at medium high for about 20 minutes until potatoes are tender. Taste. Salt if needed. Should be delicious by now.
  6. Serve over white rice and prepare to Smash!
