Cajun Roasted Veggies

Who says Brussels sprouts aren’t good? They are in this Cajun roasted veggie mix. Take fresh veggies cut them into bite sized pieces, add seasoning, oil, then bake until roasted. The kids may eat all of these Cajun roasted veggies, enjoy.

 

Cajun Roasted Veggies

Ingredients

  • 1 Zucchini diced into nice sized chunks
  • 1 yellow squash diced into nice sized chunks
  • 8 oz baby Bella mushrooms sliced
  • 8 oz baby yellow potatoes sliced in half
  • 1 red bell pepper sliced
  • 1 red onion sliced in generous chunks
  • 8 oz Brussels sprouts sliced in half
  • Extra virgin olive oil
  • 2 Tbsp Cajun Seasoning
  • Salt, pepper and garlic powder to taste or The Blend by Kinder’s

Directions

  1. Preheat oven to 400° F
  2. Cut vegetables into 1/2″ – 1/4 ” pieces
  3. Line a large baking sheet with aluminum foil for easier clean up.
  4. Transfer your washed and cut vegetables to the pan in a single layer.
  5. Drizzle with olive oil (about a Tbsp or two).
  6. Season with salt, pepper and garlic powder blend.
  7. Next season with Cajun Seasoning. Use hands to mix together well.
  8. Bake for 30 minutes, checking half way and turning with a spatula.
  9. Finish the cook. Serve as a side or as the Main course.
