This Alfredo pasta has a Cajun twist. The sauce is made with loads of Parmesan and cream cheese then add smoked sausage and Cajun seasoned chicken. Cajun chicken Alfredo is magic made in the kitchen, your tongue will thank you, enjoy.
Cajun Chicken Alfredo
Ingredients
- 1 lb Boneless skinless chicken breasts cut into bite-sized chunks.
- Olive oil
- 14 oz smoked sausage sliced diagonally
- 3 cloves garlic minced
- 1/4 small yellow onion diced
- 1/2 red bell pepper diced
- 1/8 cup Sun-dried tomatoes sliced
- 2 1/2 cups heavy whipping cream
- 1/2 cup chicken stock or white wine
- 4 oz cream cheese
- 1 lb penne pasta cooked according to package directions
- 2 Tbsp Cajun Seasoning plus more to taste
- 4 oz Parmesan cheese freshly grated
- Freshly chopped Italian parsley for garnish
Instructions
- Season chicken with Cajun Seasoning.
- Heat olive oil in a large skillet.
- Cook chicken 5-7 minutes until done and no longer pink in the center. Set aside.
- Cook smoked sausage in same pan until browned. Set aside.
- In a large Cast iron skillet or Saucepan add 1-2 Tbsp Olive Oil on medium heat.
- Add onions, red bell pepper, garlic and sun-dried tomatoes and saute for about 2-3 minutes.
- Add heavy whipping cream and chicken stock or wine.
- Bring to a simmer for 3-4 minutes until sauce starts to thicken a bit.
- Add cream cheese and stir until melted and well combined.
- Mix cooked pasta with the Alfred sauce.
- Next add the chicken and smoked sausage. Mix well and remove from.
- Top with grated Parmesan. Garnish with fresh chopped parsley and serve with garlic bread.
