When was the last time you made braised oxtail? This hearty dish takes oxtails, carrots, garlic, celery,and onions then slow cooks them blends in a delicious stew your fam will love, enjoy.
Braised Oxtails
Ingredients
- 4 lbs Oxtails
- 4 large carrots peeled and roughly chopped
- 1 onion chopped
- 2 stalks celery chopped
- 4-5 garlic cloves minced
- 3 bay leaves
- 2 sprigs fresh Rosemary
- 1 cup red wine
- 1 14 can tomatoes chopped or diced
- Salt and pepper
- 4 cups beef stock
Directions
- Generously season Oxtails with salt and pepper then brown them in a large pot or Dutch oven in a bit of oil (about a Tbsp). Remove and set aside.
- To the same pot add onions, celery, and carrots. Cook until golden and slightly softened.
- Add garlic and herbs. Saute another minute or so.
- Pour in red wine and allow to reduce a bit.
- Next add tomatoes and Oxtails back to the mix.
- Pour in enough stock to cover Oxtails.
- Season with salt and pepper, bring to a boil then reduce heat to a gentle simmer, cover and simmer for 3 hours.
- 4. Check every hour or so to see if Oxtails need more stock. Remove the lid for the last hour of cooking to allow sauce to reduce.
- 5. Check taste and tenderness. Delicious right?! Cool! Serve over Smashed Potatoes, rice or polenta.
