Blue Ribbon Chicken

Ingredients
  

  • 1 Lb wings
  • 4 egg whites
Breading
  • ½ cup flour
  • ½ cup Matzo meal
  • ¼ tsp baking powder
Spice blend
  • 2 tsp hot or smoked paprika
  • 1 ½ tsp salt
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried parsley
  • ½ tsp basil
  • ¼ tsp cayenne pepper

Method
 

  1. Combine spice blend ingredients and mix well
  2. Season both sides of chicken with the spice blend
  3. Create an egg wash with 4 egg whites and 4 tsp of water (beat well)
  4. Add flour, Matzo meal, and baking powder to a large bowl and mix well
  5. Dip wings in egg wash covering the entire wing
  6. Then bread the wing in flour mix shake of excess flour and set to the side
  7. Preheat pan or deep fryer with oil to 350 (med-high)
  8. Fry wings 10-12 min until golden brown
