This white fish recipe is delicous and can be served in a sandwich or alone. Seasoned with things like garlic paprika and cumin then blacken until the outside has a nice crispy texture while the inside is still flacky and tender, this blacken cod sandwich is a winner.
Blackened Cod Sandwich
IngredientsÂ
- 4 Pacific Cod filets or preferred white fish (thawed if frozen)
- 2 Tbsp oil
- 2 Tbsp butter
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 3/4 teaspoon cayenne pepper
- 1 teaspoon black pepper
- 1/2 teaspoon Salt
- Brioche Buns
- For the Cajun sauce
- 1/2 cup mayonnaise
- 1 1/2 teaspoons ketchup
- 1 Tbsp dill relish
- 2 Tsp Cajun Seasoning

- In a small bowl combine mayonnaise, ketchup, relish and Cajun Seasoning. Whisk or stir together well. Cover a and refrigerate for later.
- In a separate bowl combine all the blackening spices. Mix well.
- Coat both sides of your fish generously with blackening spices.
- In a large skillet add oil and met butter. On a medium high heat add fish and cook for 3-4 minutes per side (Internal temperature should be 137°F
- Serve Blackened Fish on Brioche Buns with Cajun Sauce and have at it.
