Ingredients
  

  • 1 15 oz can black beans drained and rinsed
  • ½ yellow onion diced
  • 1 4 oz can green chilies
  • 4 oz water
  • 1 Jalapeño pepper diced Optional
  • 1 Tbsp oil Avocado or olive oil
  • 1 Tbsp Taco Seasoning
  • Small pkg corn tortillas
  • Shredded cheese of your choice
  • Shredded lettuce
  • Chipotle hot sauce
  • Lime wedges
  • Lime Crema
  • 2 Tbsp Mayo or vegan Mayo
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Juice of half a lime
  • 1 tsp red wine vinegar or apple cider vinegar
  • ½ Jalapeño diced finely Optional

Method
 

  1. In a medium sized skillet heat oil on medium heat.
  2. Add onions and Jalapeños. Saute for 2-3 minutes.
  3. Add beans green chilies, Taco Seasoning and water then mix
  4. Bring to a boil then simmer until liquid is reduced.
  5. Add all Crema ingredients to a bowl and combine well. Adjust flavor if needed.
  6. Heat tortillas on grill or pan.
  7. Layer Tacos with shredded lettuce, black bean mixture, lime crema, cheese and cilantro if desired.
