Black Bean Tacos with Lime Crema
Ingredients
- 1 15oz can black beans drained and rinsed
- 1/2 yellow onion diced
- 1 4oz can green chilies
- 4oz water
- 1 Jalapeño pepper diced (Optional)
- 1 Tbsp oil Avocado or olive oil
- 1 Tbsp Taco Seasoning
- Small pkg corn tortillas
- Shredded cheese of your choice
- Shredded lettuce
- Chipotle hot sauce
- Lime wedges
- Lime Crema
- 2 Tbsp Mayo or vegan Mayo
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Juice of half a lime
- 1 tsp red wine vinegar or apple cider vinegar
- 1/2 Jalapeño diced finely (Optional)
Directions
- In a medium sized skillet heat oil on medium heat.
- Add onions and Jalapeños. Saute for 2-3 minutes.
- Add beans green chilies, Taco Seasoning and water then mix
- Bring to a boil then simmer until liquid is reduced.
- Add all Crema ingredients to a bowl and combine well. Adjust flavor if needed.
- Heat tortillas on grill or pan.
- Layer Tacos with shredded lettuce, black bean mixture, lime crema, cheese and cilantro if desired.
