Buffalo Chicken and Bang Bang shrimp Subs
Prep time: chicken 10 min, shrimp 15 min
Cook time: chicken 10 min, shrimp 20 min
Ingredients
Buffalo chicken
- Shredded rotisserie chicken breast
- 1/4 cup Louisiana hot sauce
- 1/4 cup sriracha sauce
- 1 1/2 Tb butter
Bang bang shrimp
- 1 cup buttermilk
- 1-2 Tb sriracha sauce
- 1/2 Lb shrimp
- Cajun seasoning
- 1 cup corn starch
- 1/2 cup Panko bread crumbs
- 1 Tb smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
Bang bang sauce
- 1/3 cup mayo
- 1 1/2 Tb chili garlic sauce
- 1 1/2 tsp Sriracha sauce
- 2 Tb sweet chili Thai sauces
- 1 Tb agave or honey
- 1 1/2 tsp rice wine vinegar
Directions
Buffalo chicken
- Whisk together sauces and butter until well blended
- Add chicken and fully coat with sauce
- Allow to sit several minutes the longer the better
Bang bang shrimp
- Add 1-2 Tbsp Sriracha to 1 cup buttermilk and mix until it is fully blended
- Â Using thawed shrimp season well with Old Bay, Cajun, or other seasonings
- Add shrimp to buttermilk mix and marinade for 30 min.
- In a large bowl combine 1 cup corn starch, 1/2 cup Panko bread crumbs, 1 Tb Spanish paprika, 1/tsp garlic powder, and 1/2 tsp onion powder. Mix well
- Add marinaded shrimp to breading and cover completely
- Preheat 1/2 in. of oil in a pan over med-high heat.
- Add shrimp to hot oil and cook 1 1/2 min per side, only until slightly browned
- Blend bang bang sauce ingredient to create the sauce
- Mix fried shrimp with sauce blending well
Build’n the Sammich
- Â Cut a center section out of the bun without cutting all the way thru and remove
- Layer Colby jack or whichever cheese you like into a bun
- Add meat filling
- Apply another layer of cheese on top
- Preheat broiler to High
- Cook sandwich 5 min until cheese melts and bread is golden brown
