Alabama BBQ Chicken Sub

Ingredients
- 6-8 chicken tenders
- 2 shallots
- 1 1/2 cup of shredded cheese
- French roll
White BBQ sauce
- 1/2 cup mayo
- 2 tbsp white vinegar
- 2 tbsp white pepper
- Creole or Chipotle mustard
- 1/2 tsp salt
- 2 tbsp sugar
- 2 garlic cloves
- 2 tsp horseradish
- 1 Tbsp lemon juice
- 1/2 tsp paprika
Directions
- Â In a large bowl mix all ingredients for white BBQ sauce
- Salt and pepper on both side of chicken tenders
- Add 2 tbsp of olive oil to a pan and preheat on med-high heat
- Â Cook chicken 4-5 min per side (halfway thru add shallots to the pan)
- Set meat to the side and allow to cool
- Chop chicken into 1 in chunks
- In a bowl add chicken chunks, white sauce, shallots, and shredded cheese (mix well)
- Preheat oven to 450
- Slice french roll down the middle and add meat filling
- Top with more white sauce and cheese then broil for 5-10 min
