Method
- Preheat oven to 350° F
- Season both sides of chicken thighs with salt, pepper, and Italian seasoning blend.
- Heat vegetable oil on medium-high heat in a large skillet.
- Add chicken thighs skin side down and cook for 5 minutes on the skin side until browned nicely.
- Transfer the chicken to a baking sheet lined with aluminum foil skin side up and bake at 350° F for about 25 minutes until the thighs are no longer pink in the center.
Mushroom Sauce
- Heat remaining Tbsp vegetable oil in a large skillet on medium heat. Add sliced mushrooms to skillet and cook for 3 minutes (turning once).
- Add chopped cooked bacon to the skillet. Add heavy whipping cream, 1/8 tsp Salt, and thyme sprigs to the mix.
- Bring to a boil, stir and immediately reduce heat to low and simmer for 2 minutes and allow flavors to blend well. Taste and add salt if needed.
- When chicken is done baking and chicken thighs are completely cooked through add chicken to skillet and spoon Mushroom Sauce over chicken.
Served with green beans
