You may have seen Mexican street food vendors selling a strange dish made from corn and mayo often times on a stick or the kernels scraped into a cup. Either way the combination of corn, mayo, cheese and spice make the Elote a king of the street foods. Elotes are easy to make and have an awesome flavor so if you’ve never had one it’s time to try! Elote Mexican street corn
Ingredients
- Several ears of corn (de-husked)
- Cotija cheese
- Tajin chili powder (or your favorite spicy chili or paprika)
- 1/4 cup mayo (not miracle whip)
- 2 Tb sour cream
Directions
- Corn can be grilled or boiled
- Mix mayo and sour cream
- Evenly spread crema (mayo & sour cream) over surface of corn covering evenly
- Cover corn with Cotija cheese
- Sprinkle favorite spicy chili pepper or paprika on top
