Method
- Preheat over to 400
- After cleaning potatoes cover with olive oil and wrap in aluminum foil
- Bake for 40 min until soft
- Once cooked slice open pot
Cajun shrimp & chicken filling
- Season shrimp with Cajun seasoning covering both sides thoroughly
- Place 1-2 tbsp olive oil in pan and preheat on med
- Cook shrimp 1-2 min per side once cooked set to the side
- Butterfly cut 2 chicken breast
- Season with Cajun and paprika seasoning covering both sides thoroughly
- Preheat skillet with 1 tbsp garlic butter on med high heat
- Add breast and cook 5 min per side
- Once done slice chicken into smaller pieces
- Reuse same skillet and oils to saute several broccoli florets for 3-5 min
- Slice open top of cooked potato (salt, pepper, butter as needed)
- Add Cajun shrimp and chicken topping (nacho cheese optional)
Philly filling
- Preheat pan with 1-2 tbsp of oil on med high heat
- Add frozen or fresh steak
- Cook 2 min then flip for 2 min
- Break meat up add onions and peppers and cook 5 min
- Add 2 slices of provolone cheese and allow to melt
- Slice open baked potato (salt, pepper, butter as needed)
- Top potato with Philly filling
