Blackened Catfish

Cook time: 10 – 15 min
Ingredients
- 2 catfish fillets
- Melted butter
Spice mix
- 1 1/2 Tbsp paprika
- 1 Tbsp garlic powder
- 1 Tbsp onion powder
- 1 Tbsp ground thyme
- 1 tsp blk pepper
- 1 tsp cayenne pepper
- 1 tsp dried oregano
- 1 tsp salt
- Polenta corn grits
Directions
- Season both side of filet with the spice mix
- Preheat skillet (medium heat) with 1 tsp butter
- Cook fillet 2-3 min per side
- Boil 3 cups water 1 tsp salt
- Add Polenta to water simmer for 10 minutes
