Preparing Rack of Lamb, the good, the bad, and the ugly

Kenny is in the kitchen this time he’s showing how to prepare rack of lamb.

Rack of Lamb

Ingredients

  • Rack of Lamb
  • Kosher salt
  • Pepper
  • 3-4 cloves minced garlic
  • 3-4 tbsp Dijon mustard
  • Thyme
  • Rosemary
  • Parsley

Directions

  1. Prepare the rack of lamb by layering on the seasonings
  2. Cover lamb in salt on both sides (press into meat once covered)
  3. Next layer on pepper
  4. Mince 3-4 cloves of garlic enough to cover both sides of lamb.  Pat garlic into the meat
  5. Cover next with Dijon mustard (3-4 tbsp)
  6. Finally add thyme, rosemary, and parsley.
  7. Preheat oven to 450
  8. Roast Lamb for 10 min (meaty side up)
  9. Reduce heat to 350 and roast for 20 min (lamb rack size and type of cookware may affect cook time)
