Adobo Chicken
Ingredients
- 5-6 chicken thighs or dark meat
- 1 cup soy sauce
- 1 cup white vinegar
- 6-8 cloves of garlic crushed
- 4 tbs black pepper or pepper corns
- 2 tbs coconut oil
- 1-3 Bay leaves
Directions
- Place chicken in pot
- Cover with soy sauce and vinegar
- Spread garlic throughout pot.
- Add bay leaves and lots of pepper or pepper corns.
- Bring to boil.
- Reduce heat and simmer for at least 45 minutes (until preferred tenderness).
- Add coconut oil 15 min before done.
- Serve with white rice
