White chicken chili is a get replacement to to your usual chili. Made with white chili beans, chicken thighs and breast, and green chili’s this white chicken chili might be your new favorite, enjoy.
White Chicken Chili
Ingredients
- 1 lbs boneless skinless chicken thighs or breasts
- 1-2 cans Bush Chili Magic White Chili
- 1 can (4oz green chilies
- 2-3 cups chicken stock
- 1 cup frozen corn (Optional)
- 1 medium onion diced
- 2 garlic cloves minced
- 1 Tbsp garlic powder
- 1 Tbsp Cajun Seasoning
- 1 tsp ground cumin
- 1 tsp Chili powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 4 oz Philadelphia cream cheese softened
- 1/2 cup heavy whipping cream
- Sour cream and chopped cilantro for garnish
Directions
Prep:
- Season chicken with salt and pepper, garlic powder and Cajun Seasoning. Grill 4-5 minutes per side. Remove from heat, let rest and slice into bite-sized pieces.
- In a large pot or Dutch oven, saute diced onion and minced garlic over medium heat until softened and fragrant.
- Add green chili’s, cumin, chili powder, smoked paprika, salt and pepper. Stir to combine.
- Pour in chicken broth/stock and bring to a simmer.
- Add chicken, Bush Chili Magic or white beans and frozen corn (if using) simmer 15-20 minutes so flavors can Flavor!
- Stir in cream cheese until fully melted and incorporated.
- Then add heavy whipping cream and stir until smooth.
- Serve Hot, with Cheddar cheese, chopped cilantro and a squeeze of lime if desired.
