These chopped chicken grinder rolls are amazing as a snack or meal. It’s made with grilled skinless chicken breast that’s marinaded in a bold sauce then served on a toasted bun and topped with cheese and a succulent salad, enjoy.
Chopped Chicken Grinder Rolls
Ingredients
- 6 Brioche hot dog buns
- 6 sliced Provolone cheese
- 2 pounds thin sliced boneless skinless chicken breasts
- 1/2 cup Budweiser Bold and Savoy Marinade
- 1 tsp The Blend by Kinder’s or with salt and pepper
- 1 Tbsp Cajun Seasoning
- 3-4 Pepperoncini peppers or banana peppers chopped
- 1/4 red onion diced
- 2 cups iceberg lettuce chopped
- 2 Tbsp red wine vinegar
- 1 1/4 Tbsp dried oregano
- 2 Tbsp extra virgin olive oil
- 1 1/4 cup mayonnaise
- Salt and pepper to taste
Directions
- Preheat oven to 350°F.
- Season chicken with the Blend spice and Cajun Seasoning.
- Place in a large bowl, pour on Marinade and massage until thoroughly coated. Set aside.
- In a large bowl add mayonnaise, olive oil, red wine vinegar salt, pepper and oregano.
- Whisk together then add pepperoncini, red onions and lettuce. Toss together well. Set aside.
- Heat 2 Tbsp Olive Oil in a large skillet on medium high heat.
- Cook chicken for 4-5 minutes then flip and cook an additional 3 minutes until succulent.
- Remove and let rest 7-8 minutes before slicing.
- Toast buns if desired. Add Provolone slices and a layer of chicken.
- Place in oven just until the cheese melts through.
- Remove and add Grinder Salad toppings
