Greek Chicken
Ingredients
- 1 whole chicken cleaned and cut into quarters
For Marinade:
- 2 Tbsp fresh thyme roughly chopped
- 2 Tbsp fresh Rosemary roughly chopped
- 1 Tbsp lemon Zest
- Juice of half a lemon
- 5 garlic cloves minced
- 1/4 cup extra virgin olive oil
- 1 Tbsp Kosher Salt
- 1 1/2 tsp dried oregano
- 1 tsp ground coriander
- 1/2 tsp red pepper flakes
- 1 tsp cracked black pepper
Directions
- In a large bowl combine marinade ingredients. Mix well.
- Add chicken. Mix together with your hands, have fun with it.
- Coat chicken well and let marinate for at least 30 minutes but no longer than 2 hours.
- Heat grill to 350° F.
- Place chicken and cook for 10-12 minutes.
- Flip and cook an additional 7-8 minutes.
- Flip once more and cook until internal temperature of 165 degrees is reached.
- Let rest for a few minutes.
- Serve with potatoes, Cilantro Lime Rice, pita bread and Tzatziki sauce if desired.
