
Smoked Half Chickens

Method
- In a large bowl thoroughly mix dry rub ingredients.
- Generously season and pat dry rub in the chicken.
- Preheat smoker to 275°F.
- Place chicken on the bottom rack. Close lid and relax.
- Check every 45 minutes to hour.
- Once internal temperature reaches 160°F brush a thin layer of BBQ Sauce over the chicken and cook an additional 15 minutes until internal temperature reaches 165°F
- Remove chicken and let it rest on the cutting board for 15 minutes.
- Carve and plate.
