Smoked Half Chickens

Perfectly seasoned half chicken smoked to perfection. This recipe Kenny smokes half chicken using a custom seasoning blend to make a tender delicious meal, enjoy.

Ingredients
  

  • 2 whole chickens cut in halves
Chicken Dry Rub:
1 Tbsp of each:
  • Garlic powder
  • onion powder
  • ground cumin
  • smoked paprika
  • Cajun Seasoning
  • brown sugar
  • Kosher Salt
  • cracked black pepper
  • Your favorite BBQ Sauce Optional

Method
 

  1. In a large bowl thoroughly mix dry rub ingredients.
  2. Generously season and pat dry rub in the chicken.
  3. Preheat smoker to 275°F.
  4. Place chicken on the bottom rack. Close lid and relax.
  5. Check every 45 minutes to hour.
  6. Once internal temperature reaches 160°F brush a thin layer of BBQ Sauce over the chicken and cook an additional 15 minutes until internal temperature reaches 165°F
  7. Remove chicken and let it rest on the cutting board for 15 minutes.
  8. Carve and plate.
