Tuscan Garlic Salmon with Spinach and Tomato
Ingredients
- 1 pound salmon filet
- 2 Tbsp Olive Oil
- 1 Tbsp extra virgin olive oil or1 Tbsp butter
- 1 tsp smoked paprika
- 1/4 tsp red pepper flakes
- 1 tsp Italian seasoning
- 1 tsp Kosher Salt
- 1 tsp cracked black pepper
- 1 small onion chopped
- 4 garlic cloves minced
- 3-4 Roma tomatoes chopped
- 6 oz fresh spinach
- 1/4 cup fresh basil leaves chopped
- 1/2 cup vegetable stock or white wine
- An extra Tbsp high quality olive oil
Directions
- Mix dry ingredients
- Season salmon filet on both sides.
- In a large skillet heat 2 Tbsp Olive Oil on medium heat.
- Cook salmon for about 5 minutes until done. Set aside on a plate.
- In the same skillet add 1 Tbsp of olive oil or 1 Tbsp butter.
- Add onions and garlic. Cook about a minute until translucent.
- Add tomatoes, basil, spinach and vegetable stock or white wine.
- Cook on medium heat for about 5 minutes just until spinach begins to wilt a bit and tomatoes start to release juices. Taste and add seasoning if needed.
- Return Salmon back to the skillet for a quick reheat. Drizzle with the good quality olive oil if desired and serve immediately.
