Garlic Brown Sugar Lamb Ribs
Ingredients
- 1 lamb rib rack cut into servings
- 6 cloves garlic minced
- 3 Tbsp Olive Oil
- 1 Tbsp fresh Rosemary chopped
- 1/3 cup chicken broth
- 3 Tbsp brown sugar
- 4-5 sprigs fresh Rosemary
- Salt and pepper to taste
- 2-3 green onions chopped for garnish
Directions
- Preheat oven to 400°F
- Heat large cast iron skillet on medium high heat. Add oil once hot.
- Season lamb with salt and pepper on both sides.
- Add to the skillet and sear on both sides for 5-7 minutes.
- Transfer to a plate and cover with aluminum foil.
- Reduce heat to medium, add garlic and saute for about 30 seconds until fragrant.
- Next add chopped Rosemary. Allow to simmer another 30 seconds or so.
- Add brown sugar and broth. Combine until sugar has totally dissolved.
- Season with salt and pepper to taste. Stir and allow sauce to thicken for about 4-5 minutes.
- Return lamb ribs back to the pan.
- Baste with sauce add a few sprigs of Rosemary and transfer to the oven for 5-7 minutes.
- Finish on broil for 1-2 minutes and serve. Garnish with chopped green onions and..
