If you haven’t tried jerk seasoning on fish its time for Jamaican jerk red snapper. This fish has a mild yet nutty flavor and tasted great covered in jerk seasoning and grilled whole. Jamaican jerk Red Snapper will make you taste bud happy, enjoy.
Jamaican Jerk Red Snapper
Ingredients
- Jerk Sauce and Marinade
- 3/4 cup Worcestershire sauce
- 2 Tbsp soy sauce
- 3 oz ginger (about 4-5 small pieces)
- 2 Tbsp Whole Allspice
- 1/4 cup black peppercorns
- 1/2 cup palm sugar
- 1 handful thyme
- 5-6 Garlic cloves
- 2 Tbsp Kosher Salt
- 1 habanero pepper or Scotch Bonnet for more authentic flavor (stem removed)
Directions
- Add all jerk Marinade/Sauce to a blender or food processor. Blend ingredients well to a smooth texture (about a minute).
- Clean snapper and pat dry with paper towel. With sharp knife, score fish diagonally 2-3 times on both sides to ensure Marinade is throughout (and it just looks fye).
- Pour over Marinade and massage into where you scored fish. Let marinate at least 30 minutes.
- Heat a large cast iron skillet with the grill marks on medium high heat. Add a Tbsp of oil. Place your red snapper in the skillet and cook for 4-5 minutes per side. Pro Tip: Try cooking them about 4 minutes per side (just until they’re golden brown on both sides) then finish them in a 350° oven for 7-9 minutes.
