Italian Braised Chicken
Ingredients
- 1 lb. Chicken Thighs(bone in)
- Salt
- Ground black pepper
- 14oz canned whole peeled tomatoes( half of a 28oz can)
- 1 Tbsp Olive Oil
- 1/2 onion diced
- 3 garlic cloves minced
- 10 fresh Italian Basil leaves chopped
- Salt to taste
- 1 Tbsp brown sugar
- 1 Tbsp Italian parsley chopped for garnish
Directions
- Rinse Chicken and pat dry with paper towels. Season with salt, pepper, and garlic powder on both sides.
- Puree the tomatoes in a food processor or blender.
- Heat braised or cast iron skillet on high heat then add chicken (skin side down) and brown both sides.
- Remove chicken but leave the juices that seep out.
- Reduce heat to medium and add olive oil.
- Saute onions and garlic for a couple of minutes until onions soften a bit.
- Add tomato puree and basil. Stir well.
- Transfer chicken back to the mix. Cover and let simmer for 20 minutes or until chicken is tender.
- Add brown sugar (salt to taste if needed) and combine well.
- Garnish with Italian parsley.
